That’s a chitarra in the last shot which is used in the Abruzzo to cut pasta which comes out looking like thick spaghetti. 80% of Rome’s restaurants are run by Abruzzesi according to Rachel and many of the recipes regarded as Roman in fact come from the region. You queue for your meat then cook it over open charcoal barbecues. The highlight is these arrosticini, tasty little kebabs of lamb shoulder which come from the sheep that graze up in the mountains. The sausages are incredibly good too.
