I sometimes think partridge is my favourite game bird - less full-on and ‘gamey’ than pheasant, more subtle and delicate than chicken. But what wine should you drink with it?

Ended a particularly indulgent week’s eating with a perfectly cooked whole turbot @littlefrench_bristol (not just for me I hasten to say) Served with a gorgeous buttery dill hollandaise, new potatoes AND chips.
