So here’s the @sticheltondairy Stichelton they sell and a Stichelton and onion spaghetti I’ve made from it from my book The Frugal Cook. Although it turns out white rather than blue which is no bad thing. Thinking a bit of crisp bacon or pancetta would be a good addition but would obvs not then be veggie. Bit of parsley (in the original recipe) would be nice too. Stichelton btw is almost identical to Stilton but unpasteurised which means it’s not allowed to be called Stilton.
