It’s easy to get a fixed idea in your head about what you should pair with a particular ingredient or dish - blue cheese and port for example - but if you think about the other ingredients on the plate it can take you in a totally different direction. It was a treat to myself I started during lockdown - I get them once a fortnight - and it is the best thing I’ve spent money on this year. These are #amaryllis (amarylli?) and they were so large that they filled two vases (swipe for the other one). If you live on your own - or with a partner who isn’t into buying flowers* - it’s the BEST thing you can do for yourself even if it’s just a bunch of daffs. . *although you could always mention that it would make your day 😉 . . #flowers #freshflowers #sunlight #nofilter #selfcare #happiness #wellbeingRunning down the freezer in preparation for Christmas I came across a pack of lamb mince and had a sudden irresistible craving for moussaka. Wouldn’t remotely claim that mine was authentic but reckon I’ve just about nailed the topping, a base of thick white sauce (half whole milk, half yoghurt) + 2 eggs which achieves a nice set custardy texture. And not too much cheese - grated pecorino rather than Parmesan, ideally, and mainly on top. Cinnamon as seasoning always and baked aubergines rather than fried these days though I don’t think you get *quite* as much aubergine flavour coming through. Less oiliness though.
