What are the best pairings for Provence rosé?

Provence rosé has a particular character. It’s much crisper and drier than most rosés on the market, more like a white wine than a rosé - though within this style there are variations between the lighter, less expensive wines or ‘vins de soif’ and the more structured ones, which the local refer to as ‘vins de gastronomie’.

Thanks @marinagpoloughlin for the tip-off that the wonderful @tomnd.c.a.l.e (ex Great Queen Street) is back on the food scene masterminding the menu @cafemission.e1. It’s a largely plant-based menu including this addictive Mysore style set dosa with pumpkin sabji and coconut chutney with the occasional fish and meat dish thrown in like this @chalk_stream trout and prawn cocktail . Fresh, healthy, well-priced food served in a lovely light airy room - or the terrace outside if it’s fine which let’s face it it rarely is at the mo.
