I love it when a wine pairing you don’t totally expect turns out to be a winner just because you happen to have the right bottle open - in this case a Viognier from the Languedoc coast down in the south of France. The dish was a watercress, pear and chickpea salad with a punchy harissa and maple dressing from @sabrinaghayour’s brilliant new book Simply which I made to go with her beetroot and feta lattice pie (also awesome). I confess I haven’t made this admirable pie - yet! The recipe comes from @chefcalum’s brilliant new book The Pie Room and you can find it on my website if you click the link in my biog. Really interesting method - you roast and then braise the meat in the oven. Sounds like the perfect project for a weekend when the clocks are going back 😱.
(Also thinking it would be the PERFECT match for a good bottle of Bordeaux or Cabernet Sauvignon.)

Just the BEST evening at Sergio’s (a fab totally unreconstructed Italian resto in Bristol) scoffing carbonara with @tvsandyclarke @alanoshea13 @chefhenryeldon @ren_varsha and @pickledmimi who provided the magnificent white burgundy. Pretending to be cool in the street afterwards 🙄.
