While summer isn’t a time one feels drawn to hearty stews Moroccan tagines are a different matter. Exotic and aromatic, they somehow suit the heat and not being particularly spicy are relatively simple to match with wine.

Aubergine - or eggplant as it’s called in the US - doesn’t have a strong flavour of its own but tends to enrich any dish in which it’s included especially when baked with tomatoes and cheese.

Finally beginning to see the value of pressure cooking. An incredibly tasty lamb curry from @catherinephipps Modern Pressure Cooking in 15 minutes (+ marinating + depressurising but still much quicker than cooking it conventionally). I miss the process of watching the dish evolve but can’t deny it’s efficient. Hard to describe - part Italian, part hipster Shoreditch (the brined and smoked pork chop - apols for the really rubbish photo), it’s a much more casual restaurant than its predecessor. Some standout dishes showing really impressive technique. Some crisp little balls filled with molten Parmesan (swoon), a perfect dish of charred squid with peperonata, garganeli with fennel sausage and pangrattato (really good) and a sumptuously buttery dish of cabbage and bacon (but expensive for a side at £11). Textbook tiramisu too. Top notch cooking but almost New York pricey so a bit out of reach for a regular night out though the restaurant was rammed with twenty- and early thirtysomethings. Maybe they do deals?
