Seafood is taken super-seriously in this part of Spain. There are 3 different flavours of crab meat in the shell explained Javi Izurieta of @pazosenorans - the body meat (the sweetest), the leg meat (the most savoury) and the brown meat - the deepest in flavour. But they all went stunningly well with their 2022 albarino, a wine that’s just made for shellfish.

Both ends of a fabulous wine dinner @spring_ldn this week with wines from @domaine.hugo and veg from @fernverrow. Much more than a conventional wine dinner - a really insightful discussion about the philosophy of organic and biodynamic farming and viticulture. Absolutely loved this dish of salt-baked kohlrabi with herbs and fig-leaf oil and the honey custard tart with elderflower fritters that finished the meal. The wines were really amazing too #guest
