Made the first but what certainly won’t be the last of the recipes from @sami_tamimi’s glorious new book Boustany which is about vegetable-based cooking inspired by his homeland of Palestine. It’s the crushed broad beans with goat’s cheese and preserved lemon salsa. Although he makes it with frozen broad beans and peas which makes it a brilliant storecupboard standby I made it with fresh given both are in season - just the perfect taste of summer.
