I’ve never totally bought into the idea but a recent wine and chocolate tasting put on by Australian Wine at Australia House in London went halfway to convincing me.

Cooking with wine doesn’t have to mean a fancy sauce or a hearty stew but can transform fresh fruit like plums into a deliciously rich dessert. This is an adaptation of a recipe I first made 19 years ago with shiraz which you don’t see much of these days but can make with any full bodied red. The secret ingredient? Star anise and cloves which makes it taste like mulled wine. All you need is a drizzle of cream - or a scoop of vanilla ice cream. And good to find @1yorkplace_bristol in top form. Potato beignets with anchovy mayo, whipped smoked cods roe with radishes, fried oysters with harissa, a gorgeously gooey burrata and lobster linguine, all shared which kept both the calorie intake and the cost down! Really good wines by the glass too including a delicious glass of @weingutchristophbauer gemischter schatz, a field blend of different grape varieties. So lucky to have this round the corner. I also added - cos I agree with Mark it’s not quite the right recipe for Parmesan - a little air-fried halloumi which adds a bit of pleasingly salty cheesy crunch. And washed it down with a glass of Albariño. Well done, Mark. A really lovely, hugely readable book.
