I’ve always tended to go for Prosecco with Parma ham but last week I found an even better wine pairing - Malvasia.

Made the first but what certainly won’t be the last of the recipes from @sami_tamimi’s glorious new book Boustany which is about vegetable-based cooking inspired by his homeland of Palestine. It’s the crushed broad beans with goat’s cheese and preserved lemon salsa. Although he makes it with frozen broad beans and peas which makes it a brilliant storecupboard standby I made it with fresh given both are in season - just the perfect taste of summer. Seems so very wrong that his compatriots can’t eat food like this, and in many cases struggle to feed themselves and their families at all.

You can’t really see the crab but this was an absolutely cracking dish of bucatini cooked Malaysian style with crab, garlic, soy and crispy chilli oil from @julielincooks terrific new book Sama Sama. (The chilli crisp puttanesca). Lots of similarly inventive and enticing recipes. Check it out next time you’re in a bookshop.
