Somehow I ended up having this Singapore crab and chips at two successive meals @therockfishuk this weekend. From L to R classically elegant @maiaprovence, @chateaubauduc’s deliciously fruity Bordeaux rosé @chefrickstein edition @dunleavyvineyards delicate pretty English rosé (made from Regent and Seyval Blanc - check out their crowdfunder), @bodegasmuga more substantial savoury rosado, @domainemaby’s deep, deep pink Tavel, @camillodonati’s gently fizzy cherryish pet nat and @boschendalwines immensely drinkable MCC rosé which has one of the the prettiest bottles out there (from festival wine theatre organisers @michaelsuttonscellar). Still an overall preference for the paler styles but good to get across that there are more sources of rosé than just Provence - and that you can drink it year round. Scallops with artichoke and guanciale, crab with apple, ginger and lemon sorrel and hake with smoked butter sauce, caviar and samphire. I so agree with Ruby’s intro to the recipe: “I don’t know what it is about soup that inspires so much uncertainty among my otherwise kitchen-savvy friends. I know people who can make a lasagne from scratch but ask them to make soup and they freeze”. Well, not quite in my case but I certainly lack inspiration so was really pleased to find this riff on the standard carrot soup (made with a stick blender so not too boringly smooth). It’s definitely the time of year we need soup in our lives so I’m determined to do more experimenting this winter.
