Wines to match wild salmon

Forget for the moment my often-advocated match of chilled red wine with salmon, if you’re lucky enough to get your hands on a wild fish it deserves one of your best whites. Here are my suggested matches for Mark Hix’ recipes in the Independent today:

Sea trout and samphire salad
A light, fresh tasting salad including cucumber, herbs, and salty samphire that will accentuate the fruitiness of any wine you pair with it (though that may be offset by the sharp lemony dressing) A minerally Loire Sauvignon Blanc such as a Pouilly-Fumé would be the wine that I’d reach for.

Vichyssoise with poached salmon
Soup is not easy to pair with wine, chilled soup even less so but the garnish of a few salmon flakes and a spoonful of sour cream creates a more substantial dish that creates a more accommodating partner for the wine you choose. Blanc de Blancs champagne would be delicious, Chablis a slightly more affordable pairing.

Poached sea trout with wild fennel hollandaise
One of the very best ways of serving fine fish. A dead ringer for a great white burgundy or top new world Chardonnay (fennel is particularly Chardonnay-friendly)

Salmon escalope with tomatoes and basil
I love the combination of salmon, tomatoes and basil and would again go for a Sauvignon Blanc with this, this time a fruitier example such as a top New Zealand Sauvignon. (A good dish, it has to be said, for Cloudy Bay)
