Oktoberfest potato salad
The key element to this typically Bavarian recipe, which comes from my book An Appetite for Ale, is the addition of hot stock which gives it a consistency half way between a conventional potato salad and mashed potato. It also has the most delicious sweet-sour flavour.
Serves 4-6
1 kg of waxy new potatoes, peeled and cut into even-sized pieces
1 tsp vegetable bouillon powder
4 tbsp white malt vinegar
1/2 tsp salt
1/2 tsp caster sugar
1/4 tsp white pepper
2 tbsp sunflower or grapeseed oil
1 medium-sized mild or sweet onion, peeled and finely chopped
40g butter
Fresh chives or dill
Put the potatoes in a pan, cover with cold water and bring to the boil. Simmer until tender - about 12-15 minutes. Drain, reserving the cooking water. Pour 150ml of the cooking water over the vegetable bouillon powder and stir. When the potatoes are cool enough to handle (about 5 minutes), slice them roughly into a bowl.
Put the vinegar in a small saucepan. Add the salt, caster sugar and pepper and stir to dissolve. Add the oil and the onion, bring to the boil then pour the hot dressing over the sliced potatoes and stir vigorously.
Melt the butter, add to the salad and stir again. Add a little more of the potato cooking water to give you a slightly sloppy consistency, a bit like lumpy mashed potato. Leave to cool and stand for about 2 hours for the flavours to develop. Sprinkle with snipped chives or finely chopped dill and serve with cold sliced sausage and ham, frankfurters or grilled bratwrst
* Sometimes the locals add cucumber. Take half a cucumber, peel it, halve it and scoop out the seeds with the tip of a teaspoon. Cut into slices, put in a shallow plate, sprinkle with salt and put another weighted plate on the top. Leave for about 20 minutes then rinse the cucumber and pat dry. Dress with a little white vinegar seasoned with salt and sugar and a splash of sunflower oil and mix in with the potato. (Or you could serve it on its own sprinkled with a little fresh dill)
What to drink: Given this is a typical Munich salad you should drink an authentic Munchener helles or Marzen lager with it - or a Czech golden lager, at a pinch.

Barbequed brochette of prawns, squid and courgette with sauce vierge
A stunning recipe from Bruce Poole's cookbook Bruce's Cookbook that shows barbeques don't have to be all about burgers and ribs.
Bruce's restaurant Chez Bruce in Wandsworth in south London, is a place where chefs - and food writers - like to go when they're off-duty. This is one of the simpler recipes in the book which by and large isn't one of those 'quick'n'easy' volumes but a serious collection of recipes for people who want to turn out Michelin-standard - but not fiddly - food. A must-buy for any cookbook collector.
Serves 4 as a main course or more in smaller form as part of a bigger barbecue offering
2 large courgettes, topped and tailed
salt
8 fresh baby squid, each one no longer than 10cm, cleaned by the fishmonger
12 large, raw prawns, thawed if frozen
1 lemon
For the sauce vierge
6 large ripe plum tomatoes, blanched and skinned
2 large shallots, peeled and finely chopped
1 clove of garlic, peeled and minced
salt and freshly ground black pepper
your best olive oil
1 small bunch of fresh basil, leaves picked and torn
Light the barbecue. Slice the courgettes lengthways on a mandolin into thin, 2mm-thick slices. Sprinkle with salt and leave to disgorge in a colander for half an hour or so.
To make the sauce vierge, separate the tomato flesh from the seeds and pulp and discard the latter. Cut the flesh into neat 1cm dice and combine with the shallots in a mixing bowl. Add the garlic and season with salt and pepper. Leave for 15 minutes to encourage the salt to get to work with the toms. Add a good slug of olive oil and the torn basil. Adjust the seasoning and reserve at room temperature.
Dry the courgettes on absorbent kitchen paper and roll them up into tight coils. Fold each squid in half. Thread the folded squid, the courgette coils and the prawns on to the skewers evenly. Don’t worry unduly if there is an uneven number of courgettes.
Season the brochettes with salt and pepper just prior to grilling. Place them without any oil on to the barbecue and cook until pleasantly charred all over – about 5 minutes in total. Transfer to a plate and sprinkle with olive oil and lemon juice. Serve with the sauce vierge and perhaps some couscous, or a cold rice or pasta salad.
What to drink: Plenty of possibilities - a crisp, elegant Sauvignon Blanc, an Albario or a dry Italian white like a Vermentino would all be good. Or - and I suspect Bruce might well go for this himself - a bone dry Alsace grand cru Riesling.

Yoghurt-baked fish with walnut-herb crumbs
This recipe came from a fascinating dinner at which chef Greg Malouf cooked a selection of Iranian dishes from his book Saraban which he wrote with his former wife Lucy with whom he still collaborates. This unusual and simple fish dish in yoghurt particularly appealed to me and I thought it would to you too.

YOGHURT BAKED FISH WITH WALNUT–HERB CRUMBS
Greg writes: Although it might at first seem a little strange to bake fish in yoghurt, I guarantee that this wonderful dish from the north of Iran, with its crunchy walnut and herb topping, will surprise and delight you. You’ll need to select a firm white fish that becomes succulent and tender as it cooks – I find rock ling (a south Australian fish) ideal.
SERVES 6
unsalted butter, for greasing
1 kg firm white fish fillet, skin removed
sea salt
freshly ground black pepper
rice and fresh herbs, to serve
WALNUT–HERB CRUMBS
150 g fresh breadcrumbs
150 g shelled walnuts, coarsely chopped
and sieved
1/4 cup shredded flat-leaf parsley leaves
1/4 cup shredded tarragon leaves or
dill sprigs
90 g unsalted butter, melted
YOGHURT SAUCE
250 g thick natural yoghurt
1/2 teaspoon cornflour
1 large egg
1 small shallot, finely diced
2 tablespoons finely snipped chives
juice of 1/2 lime
1 tablespoon extra-virgin olive oil
sea salt
freshly ground black pepper
Preheat the oven to 180°C. Lightly butter a baking dish just large enough to fit the fish comfortably.
To make the walnut–herb crumbs, combine the ingredients thoroughly in a bowl.
To make the yoghurt sauce, whisk the yoghurt with the cornflour and egg. Stir in the shallot, chives, lime juice and oil and season lightly with salt and pepper.
Remove any stray bones from the fish, then cut the fillet into 6 even pieces. Season the fish lightly all over with salt and pepper and arrange in the baking dish. Pour the yoghurt sauce over the fish. Pack a generous layer of the walnut–herb crumbs on top of each piece of fish. Season lightly again and bake for 15–20 minutes, or until the topping is golden and crunchy and the fish is cooked through.
Serve straight away with your choice of rice and fresh herbs. (Greg served this with a simple pilau and the very pretty fresh herb and flower salad in my rather blurry picture, right)
What to drink: We actually drank a rather grand Chablis premier cru with this but I think a simple crisp white like a Picpoul de Pinet or an Albariño would work just as well.

Rustle up a Red Nose Pudding!
If you’re organising a Red Nose Day tasting tonight here’s a zany idea for a pudding that I devised for a Sainsbury’s magazine feature a couple of years ago when I interviewed TV presenter Phillip Schofield for Comic Relief.
It’s based on the classic French cherry dessert Clafoutis, a crisp sweet batter with cherries - or rather, red noses . . .
serves 8-10
2 x 425g cans of black cherries
3 tbsp of kirsch, cherry brandy or brandy (optional but good!)
4 medium eggs
60g (2 1/2 oz) caster sugar
110g (4 oz) plain flour
A pinch of salt
400ml(14 fl oz) whole milk (i.e. not skimmed or semi-skimmed)
Finely grated rind of one medium unwaxed lemon
A little flavourless oil for the tin
Icing sugar to serve
You will need a shallow rectangular cast iron dish or baking tin about 30cm x 20 cm or 1.5 litres (2 1/2 pints) in capacity
Get the cherries and batter ready two to three hours before making the pudding. Drain the cherries and place in a bowl with the kirsch or cherry brandy, if using. Mix lightly together with a metal spoon and leave to macerate, stirring the cherries into the juice a couple of times. To make the batter put the eggs in a food processor or liquidiser with the sugar, flour, salt and half the milk. Whizz together until smooth then gradually add the rest of the milk. Add the lemon rind and whizz again then pour the batter into a large jug, cover, and leave in the fridge until ready to use.
To bake the pudding preheat oven to 190°C/375° F/Gas 5. Brush the baking dish or tin lightly with the oil and put in the oven for 5 minutes to heat up. Drain the cherries (reserving the juice - a treat for the cook!) and tip into the base of the dish. Give the batter a final stir, pour over the cherries and bake for about 25 to 30 minutes until nicely puffed up and brown. (Check after 20 minutes and if it seems to be browning too quickly turn down the heat to 180°C/350°F/Gas 4.) Sift icing sugar over the pudding and serve with pouring cream or vanilla ice cream.
Recommended match: A cool cherry-flavoured fruit beer (Kriek) would be the perfect match with this although you could drink a southern French Muscat or other dessert wine.

Balthazar's Coq au Vin
It might seem bizarre turning to an American cookbook for a classic French recipe but this version from the Balthazar Cookbook is hard to beat.
Though we might be inclined to use a tender young chicken, Coq au Vin was originally made by braising the meat from a sinewy old rooster in cheap red wine for a long period of time.
Serves 4
4 large stewing hen legs
1 large yellow onion, cut into 1cm dice
1 large carrot, cut into 1cm dice
2 celery stalks, cut into medium dice
1 head of garlic, halved horizontally
1 bottle of red wine*
1 bouquet garni
Salt and freshly ground black pepper to taste
4 tablespoons olive oil
2 tablespoons tomato paste
3 tablespoons plain flour
750ml veal stock (for which there is a recipe in the book) or homemade chicken stock
250g pearl onions, peeled
225g smoked streaky bacon in one piece, diced
450g small button mushrooms
3 tablespoons chopped flat-leaf parsley
In a large bowl, combine the legs, onion, carrot, celery, garlic, wine and bouquet garni. Cover with cling film and refrigerate for 24 to 36 hours.
Strain the legs and the vegetables from the marinade, reserving the liquid and separating the chicken and vegetables. Season the legs with salt and pepper.
Heat the olive oil in a large casserole. When it begins to smoke, add the legs, in batches if necessary, being sure not to crowd the pan. Brown evenly and deeply on all sides, about 8 minutes per side. Set the finished legs to the side and discard the oil; replenish it between batches.
When finished browning the legs, reduce the heat to medium and add the reserved vegetables to the pot. Cook until they soften and begin to brown, about 5 to 8 minutes. Stir in the tomato paste and cook for about 2 minutes, then add the flour, stirring again for about 2 minutes. Add the reserved wine marinade and, as it bubbles up, use a wooden spoon to scrape the bottom of the pot and incorporate any flavourful bits into the broth. Simmer until the liquid has reduced by half, about 20 to 25 minutes, then add the stock. As it reaches the boil, reduce the heat to low and maintain a slow and gentle simmer for 1 hour, at which point the meat should be meltingly tender.
Meanwhile, prepare the rest of the ingredients: blanch the pearl onions in boiling water for 5 to 7 minutes, until tender. Drain and set aside. Cook the bacon in a dry frying pan over a medium heat until brown, about 10 minutes, then remove with a slotted spoon. Add the mushrooms to the pan and the now very hot rendered bacon fat, cook until brown, about 5 minutes, then remove with a slotted spoon. Add the blanched pearl onions to the pan, sauting until they too are brown, about 5 minutes.
Remove the legs from the braising liquid and strain the contents of the pot, reserving the liquid and discarding the vegetables. Bring to a strong simmer and skim the surface of the sauce as it bubbles, removing any visible fat. When the sauce has reduced by half, return the legs to the pot along with the bacon, onions and mushrooms and simmer for an additional 15 minutes. Just prior to serving, add the chopped parsley.
Serve with French-style pomme purée (creamy mashed potato)

What to drink*:
The tradition with this types of recipe is to drink a slightly better version of the wine you've used to cook it - a Nuits-St-Georges when you've used a basic burgundy for example but a less well-known appellation like Aloxe-Corton or Fixin would be less costly and rather more interesting. Or you could perfectly well use an inexpensive southern French red
