Spring vegetable tart with mustard cream and watercress

If you're looking for an impressive vegetarian centrepiece to a spring meal this lovely light recipe from Signe Johansen's and Peter's Yard's book Smörgåsbord, is perfect though if you serve it on its own I think it would probably only feed 4-6! (Only 4 in my family!)

Signe writes: "Wonderful as a vegetarian centrepiece for a springtime smörgåsbord, or as an accompaniment to fish and meat dishes, this puff pastry tart using seasonal baby veg tastes as delicious as it looks.

serves 6-8

1 x 320g (11oz) pack ready-rolled puff pastry

4 eggs, 3 whole and 1 yolk

100g (3½oz) asparagus tips, cut into 2cm (¾ inch) batons

6 baby courgettes, halved lengthways

3 baby aubergines, quartered lengthways

3 baby leeks, sliced into rounds about 2cm (¾ inch) thick

2 tbsp olive oil

100g (3½oz) crème fraîche

150g (5½oz) soft goat’s cheese, crumbled

1 tbsp wholegrain mustard

small bunch of dill, finely chopped

2 tarragon sprigs, leaves stripped and finely chopped

2 large handfuls of watercress, to serve

for the dressing:

1 tbsp extra virgin olive oil

1 tsp wholegrain mustard

1 tsp white wine vinegar

Preheat the oven to 200°C/180°C fan (400°F), Gas Mark 6.

Unroll the pastry onto a large baking tray lined with baking parchment and lightly score a 1cm (½ inch) border all the way around. Beat the egg yolk and brush it over the border to glaze. Toss the prepared vegetables with the oil and spread out on a second tray. Place both in the oven, with the vegetables on the top shelf, for 20 minutes, until the pastry has puffed up and the veg is just tender. Press down the centre of the pastry with the back of a spoon.

In a bowl, mix the 3 eggs with the crème fraîche, goat’s cheese, mustard, the herbs and some salt and pepper. Spread over the tart base, avoiding the border. Arrange the veg on top then return to the oven for about 20 minutes until the filing has set.

Make a dressing by whisking together the oil, mustard, vinegar and a little salt and pepper. Remove the tart from the oven and cool a little before scattering over the watercress and drizzling with the dressing.

What to drink: I always associate mustart with Chablis so would probably go for that but any crisp dry unoaked white like a Gavi or even a good pinot grigio would be delicious

If you can't face the thought of haggis on Burns' Night how about a warming bowl of deliciously creamy cullen skink - the Scots' answer to chowder?

serves 4

225g (8oz) smoked haddock, preferably undyed

300ml (1/2 pint) whole milk

1 medium to large potato (about 225g/8oz), peeled and diced

40g/1 1/2 oz butter

1 large or 2 small to medium leeks (about 225g/8oz sliced weight), cleaned and finely sliced

A good handful of chopped parsley

White pepper and a little salt (for boiling the potatoes)

Place the fish, skin side up in a single layer in a medium-sized saucepan and cover with milk. Bring gradually to the boil, simmer for a minute then take off the heat. Meanwhile put the diced potato in another pan, cover with water, bring to the boil, salt and simmer until tender. Scoop out half the potato chunks and set aside. Crush the remaining potato roughly in he remaining water. Melt the butter in a third pan* and cook the leeks over a low heat until just soft. Skin and flake the cooked fish, taking care to remove any bones. Put the crushed potato, cubed potato, fish and milk in the pan of leeks, adding enough water to get the consistency you’re looking for (surprisingly if you add water it'll still taste creamy. Heat through and adjust the seasoning (it should be salty enough but might benefit from some white pepper). Add a good handful of chopped parsley, heat through again and serve.

* you don’t need to use all these pans, obviously. You can cook the fish, then the potato in the same pan - it’ll just take longer.

What to drink: If you want to drink whisky I'd go for a light malt like Dalwhinnie or grain whisky although see Ewan Lacey's other suggestions here. Alternative you could have a glass of smooth dry white like a Chablis, Gavi or a chenin blanc

If you're vegetarian - or catering for one - you expect more than the Christmas sides while everyone else tucks into the turkey. This delicious pie from Rachel Demuth of Demuths Cookery School in Bath fits the bill perfectly.

Celeriac, leek, chestnut and cranberry pies

Makes: 1 large 20cm pie or 4 individual pies using large (100ml) ramekins or 3 7.5cm/3 inch metal rings

For the pastry:

  • 300g plain flour
  • 150g butter (or margarine if vegan)
  • 1 tsp wholegrain mustard
  • A little water as needed
  • Milk to glaze
  • Olive oil to rub the pie tin

Filling:

  • 1 leek, sliced
  • 1 clove garlic, chopped
  • 1 small celeriac, peeled and cubed into 1 cm cubes
  • 100g pre-cooked chestnuts
  • A small glass of white wine or dry sherry
  • A handful of chopped sage and thyme
  • Salt and pepper to taste
  • A squeeze of lemon juice
  • Rapeseed oil to cook
  • 4 tbsp cranberry sauce – either homemade or shop bought
  • Optional extras: grated cheddar or vegetarian Parmesan cheese, cubes of Brie or Stilton, a splash of cream

1. Preheat oven to Gas mark 6/200°C

2. Put the flour and butter into a bowl (or a food processor) and rub (or whiz) until it resembles breadcrumbs. Add the mustard and stir in well, or whiz, until the mixture forms a ball. If the mixture is too dry add a little water until it comes together easily. Wrap the pastry in cling-film and leave in the fridge to chill for at least an half an hour. (This can be left overnight and will keep for 3 days in the fridge or 3 months in the freezer.)

3. Split the pastry into the number of pies you want to make and then take about 2/3 of each ball to make the pie case - the rest is for making the lid. Roll out the larger ball of pastry out to a thickness of 2mm with a rolling pin. Rub the inside of the ramekins or rings with olive oil and push the pastry gently into the dish so that it goes into all of the edges and hangs over the top. Trim off the overhang to 1cm below the top of the ramekin (the pastry will shrink when cooking). You will be left with extra pastry for topping the pies later. Wrap this in cling-film so it doesn’t dry out.

4. Bake the pastry cases blind (without their filling) for 10 minutes – if you have some you can use baking beans on a piece of greaseproof paper. Remove the beans and paper and return to the oven for 5 minutes-the pastry should look dry; if it is wet return it to the oven for a further 5 minutes.

For the filling:

1. Heat a large saucepan and 2 tbsp of rapeseed or vegetable oil. Add the leeks and gently cook, with the lid on, for 10 minutes, checking that the leeks aren’t colouring as you cook.

2. Add the garlic and celeriac and raise the temperature. Fry the celeriac until it is starting to turn golden around the edges. Add the chestnuts, wine and herbs and stir well. If you want to add a splash of cream and/or cheese add it now.

3. Cook for 10 minutes or until the celeriac is just cooked. You may need to add a splash of water or wine to stop it from drying out. Taste and add salt, pepper, lemon juice and more herbs to your taste

To assemble the pies:

1. Carefully divide the filling mixture between the pastry cases (any leftovers are great to serve as a side dish or keep to eat the next day) make a hole in the middle of the filling and fill with a spoonful of cranberry sauce, then push the celeriac filling over the top of the cranberry.

2. Brush the top edge of the pastry with olive oil. Roll out the remaining pastry and place over the top of the ramekins. Press the edges securely and press a fork around the edges to seal.

3. Using a sharp knife trim off the cooked overhang and the uncooked pastry top neatly.

4. If you like you can decorate the pies with shapes such as stars, holly or whatever cutters you have or shapes you can cut with a knife. Stick these on with a little water and glaze the top of the pie with soya milk.

5. Bake for 15 minutes until the top of the pies are golden (or for 45 mins at 180° if you're making a single large pie). If you want to freeze or reheat the pies don’t overcook them at this stage, if you are eating them straight away bake for a further 5 minutes or a little longer for a whole pie. Allow to cool slightly and then carefully turn out the pies.

What to drink: Fortunately you can pair much the same type of wine with this pie as others in the family may be drinking with the turkey: a creamy chardonnay or a Rhône or Rhône-style blend of syrah, grenache and mourvèdre would both work well

An unusually complicated recipe for this site but one which should be absolutely worth the effort. It comes from Phil Howard's fantastic The Square: The Cookbook volume 1 which I suspect is already well-thumbed in many restaurant kitchens.

When you look at it in detail, it's not that daunting either. Howard, a natural teacher, patiently talks you through the recipes, explaining the thinking behind each dish and what to focus on to make sure it's successful including - critically - the timing of the various components.

If you cooked one a month you'd have an impressive repertoire.

Smoked haddock is the primary ingredient of many great dishes and they all possess a similar comforting nature. It has a wonderful strong flavour, rounded, smoky and somehow very homely. Not only is it delicious in itself but it also imparts its flavour effortlessly to its surroundings. It is this quality that makes it so well suited to a leading role in a risotto, and on a cold winter’s day this mellow risotto, lifted with the curry-like flavour of the vadouvan dressing, is a perfect starter.

Overview

The smoked haddock is skinned and trimmed and the skin off-cuts are used, along with onion, leek, celery and cauliflower, to make the risotto’s base stock. The haddock is poached in milk, flaked and folded through the rice towards the end.

The risotto is finished with softened leeks, cauliflower, grated hard-boiled egg and butter and is drizzled with a vadouvan dressing – a curry-like emulsion of onions, vadouvan, vegetable stock and butter.

Focus on

-- Source large fillets of undyed smoked haddock, not the bright-yellow variety so often seen.

-- The quality of the finished risotto is reliant on the flavour of the base stock. Do not compromise on the quantity and quality of its ingredients and ensure you season it fully once made.

-- Vadouvan is a French take on curry and has a phenomenal flavour. It should be available through specialist shops but if all else fails, use a top-quality mild curry powder.

-- This is a simple dish but all its preparation needs to happen on the day. The stock can be made up to 4 hours in advance. The vadouvan dressing can be made then too. The leeks and cauliflower can be blanched 2 hours or so before the risotto is cooked and the vadouvan dressing should be made an hour before.

-- The smoked haddock should be poached 30 minutes before the risotto is finished. The risotto can be part cooked an hour before serving, thereby requiring only 5 minutes’ completion. It can of course be cooked in one continuous process, in which case simply omit the ‘break’ outlined in the method below.

INGREDIENTS

2 x 250g fillets of undyed smoked haddock, skin on

Smoked haddock stock

50g unsalted butter

2 white onions, sliced

2 leeks, sliced

50g cauliflower, sliced

2 celery sticks, sliced

the skin and off-cuts from the smoked haddock, above

1 bay leaf

1 teaspoon peppercorns


Vadouvan dressing

1 white onion

50g unsalted butter

½ teaspoon celery salt

15g vadouvan powder


Other ingredients

4 large eggs

1 long, slim leek

4 cauliflower florets

2 celery sticks

90g unsalted butter

2 shallots, finely chopped

300g Carnaroli rice

500ml milk

50g Parmesan cheese, grated

 

METHOD

Smoked haddock

Skin the smoked haddock fillets. Run your fingers along the front end of each fillet to check for residual bones and remove any that you find. Trim away 1cm of the thinnest part on either side of the fillets and remove 3cm from the tail end. Reserve the skin and trimmings. Cut the haddock fillets in half and set aside, covered, in the fridge.

Place a large, heavy-based pan over a medium heat and leave for 1 minute. Add the butter, swirl the pan to melt it and then stir in the onions, leeks, cauliflower and celery. Add a pinch of salt and sweat for about 5 minutes, stirring frequently, until the vegetables have softened. Add the smoked haddock skin and trimmings, the bay leaf and peppercorns and cover with 1.4 litres of water. Bring to the boil, turn down the heat and cook at a bare simmer for 30 minutes. Turn off the heat and leave to rest for 15 minutes. Pass the stock through a colander into a bowl, discarding the solids, and then through a fine conical sieve. Taste the stock and season if necessary. Set aside to cool, then cover and chill.

Vadouvan dressing

Cut the onion in half through the root and cut each half in half again. Break the resulting quarters down into individual layers, methodically cut each layer into 3mm wide batons and then cut across into 3mm dice. Place a heavy-based pan over a medium heat and leave for 1 minute. Add 20g of the butter, swirl the pan to melt it, then add the onion and celery salt. Cook for 2–3 minutes, until tender. Add the vadouvan powder and cook for a further 2 minutes. Add 100ml of the smoked haddock stock, bring to the boil and cook at a bare simmer for 5 minutes. Add the remaining butter and turn off the heat. Briefly whisk to incorporate the butter and set aside.

Other ingredients

Bring one small and one medium pan of water to the boil and generously salt the small pan. Boil the eggs in the medium pan for 8 minutes, then lift them out, refresh under cold running water for 2 minutes and peel. Set aside, covered, in the fridge. Once they are cold, grate them on a coarse grater.

Remove the outside layer from the leek and cut the leek on the diagonal into 5mm-thick slices. Plunge into the pan of boiling salted water for 30 seconds, lift out and place on a tray lined with a kitchen cloth. Transfer immediately to the fridge. Do not refresh.

Break the cauliflower down into tiny florets and blanch them in the salted water for 1–2 minutes, until tender. Lift them out and set aside with the leeks.

Peel the celery sticks, cut across into slices 2mm thick, blanch in the salted water for 30 seconds, then refresh briefly in iced water and set aside with the other vegetables.

To part-cook the risotto

Place 700ml of the smoked haddock stock in a pan and bring to near boiling point. Place a large, heavy-based pan over a medium heat and leave for 1 minute. Add 50g of the butter, swirl the pan to melt it, then add the shallots and a pinch of salt and cook for 2–3 minutes, until softened. Add the rice and cook for 2 minutes longer, stirring frequently. Add a ladleful of stock, turn the heat down and cook, stirring frequently, until the stock has been absorbed. Add a little more and continue this process until you have no stock left. This should take about 12 minutes and the rice should be very much al dente. Tip the rice out on to a tray, leave to cool for 5 minutes and then cover with baking parchment.

Half an hour before finishing the risotto, pour the milk into a pan, place it over a medium heat and bring to the boil. Remove from the heat, add the smoked haddock and leave it to poach for 2 minutes, then turn it over in the milk. When it is cool enough to handle, lift out the smoked haddock, gently break it into succulent flakes and set it and the poaching milk aside.

To serve

Pour 600ml of the stock into a pan and bring it to near boiling point. Put the rice into a large pan and place it over a medium heat. Add 100ml of the haddock poaching milk and stir continuously while it heats up. Continue to stir until the rice has absorbed the stock, then add a bit more and continue this process, tasting the rice as you go, until all but a small amount of stock has been added and/or the rice is nearly cooked – it should still be just al dente. Stir in the smoked haddock, leek, celery, cauliflower and egg. Add the remaining 40g butter and the Parmesan, remove from the heat and stir gently until the butter has melted and mixed in.

Place the vadouvan dressing over the heat until just warm. Lay out 8 preheated shallow bowls and divide the risotto between them. Drizzle a spoonful or two of vadouvan dressing over the top.

What to drink: The smoked haddock and vadouvan dressing are the key to the wine match here. I'd suggest a Pinot Gris or a Viognier or maybe an old-style white rioja like Muga's.
