A foolproof cheese fondue
If you’re making a dish as simple as fondue you need to use top quality cheese. Emmental and Gruyère are traditional but once you’ve got the hang of it you can play around with other alternatives.
Serves 2/3
425g finely sliced or coarsely grated cheese, with rinds removed
150g Gruyère or Comté,150g Beaufort and 125g Emmental or 225g Gruyère and 200g Emmental - i.e. 425g in all
2 tsp potato flour or cornflour
1 clove of garlic, halved
175ml very dry white wine (e.g. Muscadet)
1 tbsp kirsch (optional)
Freshly ground nutmeg and black pepper
Small bite-sized chunks of sourdough, pain de campagne or ciabatta to serve
You will also need a cast iron fondue pan and burner
Toss the sliced or grated cheese with the cornflour. Leave until it comes to room temperature. Rub the inside of the pan with the cut garlic. Start off the fondue on your cooker. Pour in the wine and heat until almost boiling. Remove from the heat and tip in about a third of the cheese. Keep breaking up the cheese with a wooden spoon using a zig-zag motion as if you were using a wire whisk. (Stirring it round and round as you do with a sauce makes it more likely that the cheese will separate from the liquid).
Once the cheese has begun to melt return it over a very low heat, stirring continuously. Gradually add the remaining cheese until you have a smooth, thick mass. (This takes about 10 minutes, less with practice.) If it seems too thick add some more hot wine. Add the kirsch, if you have some and season with nutmeg and pepper. Place over your fondue burner and serve with small bite-size chunks of sourdough or country bread. Use long fondue forks to dip the bread in, stirring the fondue to prevent it solidifying.
Suggested wine match: The one thing not to drink with a fondue, I was once told by a Swiss chef, is iced water. It coagulates with the cheese in your stomach and gives you chronic indigestion! Full bodied reds can also be an uncomfortable match. The best choice I've found is a crisp dry white like a Swiss Chasselas or Chignin or Roussette from Savoie. You could also drink a young grüner veltliner.

Blue cheese and preserved plums
A lovely serving suggestion from Trine Hahnemann's inviting book Scandinavian Christmas. The preserved plums couldn't be simpler.
Trine says: "The perfect end to a lovely meal. You simply have to drink port with it! Choose plums with sweetness and tender flesh."
Serves 8
For the preserved plums
500g plums
1 vanilla pod
200g caster sugar
50ml dark rum
To serve
250g Danish Blue, or any blue cheese (I would serve them with Stilton FB)
rye wafers (see picture)
Rinse and halve the plums and remove their stones. Divide them between sterilised jars.
Divide the vanilla pod lengthways and scrape out the seeds.
Mix 500ml of water, the sugar, vanilla seeds and pod in a saucepan and bring to a boil. Reduce the heat and simmer, uncovered, for 10 minutes. Remove from the heat, then add the rum and pour over the plums. Each jar must be filled to the top. Seal the jars immediately.
The plums will be best after four or five days. (Stored in the fridge or a dark, cool place, they will keep for two or three months.) Before you serve them, bring them to room temperature.
Place the cheese on a platter with a jar of preserved plums and provide plenty of rye wafers. Serve with port. (I would choose a Late Bottled Vintage port with this)

Twice-baked goats' cheese soufflés
A classic starter from the ‘70’s but one that our customers seem to enjoy every bit as much today. This version originally came from a book called Take Twelve Cooks and was one of Pru Leith’s recipes. However Stephen Bull attributes it to Peter Kromberg of Le Soufflé at the Intercontinental who was also featured in the book . . .
Anyway the beauty of them is that they can be made a couple of days ahead or frozen (see below) which makes them ideal for dinner parties. (This also explains the slightly larger than usual quantity. It is a recipe that’s tricky to scale down so you might as well make a few extra while you’re at it, borrowing some extra ramekins or dariole moulds from a friend or neighbour if you don’t have enough!)
Serves 8-10
Ingredients
6 medium eggs
55g (2oz) strong Cheddar
55g (2oz) Gruyère
110g (4oz) goats' cheese (from a goats’ cheese log)
425ml (3/4 pint) whole milk
a slice of onion
a bayleaf
85g (3oz) butter
85g (3oz) plain flour
1 tbsp Dijon mustard
Salt, pepper, cayenne pepper and nutmeg
You will also need 8-10 individual ramekins, dariole moulds or ovenproof coffee cups, lightly buttered.
Method
I prefer to do the preparation and weighing of the ingredients first, then the job can be done as a continuous process without having to stop and start all the time. Separate the eggs - the whites into a bowl for beating later and the yolks for adding to the soufflé mix. Grate your Cheddar and Gruyère and cut the goats cheese into cubes. Pre-heat the oven to 190°C/375°F/Gas 5.
Next heat the milk up with a slice of onion and a bay leaf. In another pan melt the butter and add the flour to make a roux (thick flour and butter paste) then gradually beat in the hot milk, returning the pan to the heat after each addition until the mixture is thick.
When all the milk has been added let the mixture cook over a low heat for a few minutes then beat in the Cheddar and Gruyère. Now take the pan off the heat and season with the mustard, cayenne pepper, salt, pepper and a pinch of nutmeg. The mixture needs to be quite highly seasoned because you are going to add a large amount of egg white.
Beat in the egg yolks one at a time, then mix in the goats cheese. Beat the egg whites until stiff then fold them lightly but thoroughly into the soufflé base using a large metal spoon.
Fill the buttered ramekin dishes or moulds with the mixture to just below the rim of each dish then stand them in a roasting tin lined with a tea towel. Pour hot water into the tray just under half-way up and cook in the pre-heated oven for 20-25 minutes or until well-risen and set.
Allow the soufflés to cool a little before turning them out. (They will sink slightly but don’t worry!) You can keep them wrapped with cling film for a couple of days in the fridge and even freeze them. (You will need to defrost and unwrap them before heating them.)
To serve reheat them in a hot oven at 200°C/400°F/Gas 6 for up to 15 mins until well risen.
If I’m serving them with a salad I put them on baking parchment on a baking sheet otherwise I put each one into an individual serving dish with a little double cream poured over and a sprinkling of grated Cheddar or Gruyère cheese.
* For the salad I use some roasted beetroot, walnuts, mixed leaves and a spoonful or two of salad dressing.
What to drink: Although the recipe title refers to goats' cheese it's also got Cheddar and Gruyère in it so I'd be inclined to serve a Chablis or other unoaked or lightly oaked Chardonnay rather than a Sauvignon Blanc. A blanc de blancs Champagne or sparkling Chardonnay would also be delicious. FB

A stylishly presented alternative cheese board
We tend to get stuck in a bit of a groove when it comes to serving cheese, picking five or six and serving them on a big cheeseboard but if you’re serious about trying to find a good wine match that isn’t the best strategy.
Almost certainly the blues, any washed rinded cheese such as Munster or Epoisses or a mature Camembert or Brie will pose problems for the wine you’re drinking, particularly if it’s a red.
One answer is to limit your selection to two or three cheeses of a similar type as our local tapas bar did the other day (right). This is a red wine-friendly selection of a medium-matured goats' cheese and two hard Spanish sheep's cheeses none of which caused our accompanying glass of Rioja any problems.
Note the other nice aspects of the presentation. The cheese is arranged on a varnished slice of wood which gives the 'board' an appealingly rustic look and accompanied by crisp flat bread rather than crusty bread which makes it lighter and more digestible at the end of a heavy meal. Very stylish!
