Mango tart with Sauternes
I don’t often get round to dessert as I generally stop after the main course but when you’re in a restaurant as posh as The River Restaurant by Gordon Ramsay at the Savoy it seems rude not to.
To make us feel slightly more virtuous my colleague and I decided to share one and picked the caramelised mango tart with coconut and lemongrass sorbet with which they offered us a glass of Chateau Laville 2022 Sauternes, (Gratefully accepted, thank you)
It was actually a great combination. I generally think of Sauternes in terms of classic French fruit tarts like apple and apricot* but mango is, if anything, better. And the creamy coconut sorbet helped set it off too.
I suspect you wouldn’t even have to make a tart. Anything mango-y and creamy would work. Rice pudding with mango purée even.
You can buy Chateau Laville 2022 by the half bottle - the best way unless there’s a crowd of you - from about £26-£29 from independents such as NY Wines but own label bottles like Waitrose No 1 Sauternes which is made by Chateau Suduiraut would do the job just as well and are grat value, especially on promotion. As are other sweet wines from Bordeaux and elsewhere in south-west France.
*as well, of course as the classic pairings of foie gras and roquefort though I’m less keen on the former.
