This recipe which I edited slightly from the version in the Oktoberfest Insider Guide by Sabine Kafer, comes from my beer and food book An Appetite for Ale. The secret is the lavish last minute slathering with butter.

Lovely to be back @caperandcure last night for the launch of their new menu which included this beautiful plate of Cornish seabream carpaccio with oyster mayo and blood orange, scallop with apple, crispy pork skin and asparagus and a lovely wobbly pannacotta with the first of the new season’s strawberries.
