  <title><![CDATA[Comment on Epoisses and marc de Bourgogne]]></title>

  <description><![CDATA[I wouldn't normally respond to a 3 year old article but since most of the wine pairings on epoisses that comes up on the first couple of pages in google are just plain out wrong, I'd like to add my notes. A friend of mine brought me some epoisses and said he had yet to find a good pairing for it after about 12 different tries. Our thoughts:

Most red burgundies is a bad pairing. The (although relatively small amounts of) tannins does not go well with the wine. The cheese is overpowering.

We tried with vin jaune from jura, thinking it would have the power to go with the cheese. This is also a disaster, but it fits with some of the nutty and saltynotes, leaving me to think that some of the lesser dry madeiras or ideally an amontillado sherry would go well. 

Even though sauternes is not a bad match, to my taste, the sweetness is a bit much with this cheese.

Pairing with a good auslese from mosel works and is almost a perfect pair, especially if it's gotten some age. We drank Jos. Christoffel Graacher Domprost '94.]]></description>

  <description><![CDATA[Gordon, Ohh, I must bite on this one! OK, IMHO, John Mayer is sort of like Tillamook cheddar OK if you're in the car. For me, the Pixies would be like a rlleay good Comte or a Robiola. So there is my calibration.  Now I like Green Day for what they are, but the best I would give them would be only a bit better than the Tillamook, maybe like a 3 year-old Widmer or some fresh curd? OK, now what band would go with with Red Hawk, and what cheese would you put with Motorhead?Cheers!]]></description>

I guess the Wineaux is making the right kind of friends as well as having a family with a good taste for Riesling.  It's cheap and tastes like million dollars!  What's not to like about it!  Not only doest it go great with Thai  goes even better with a friend!  Thanks for posting a white wine.  I do have a question about Riesling in general  Is there a certain opportune temperature it should be served at.  I'm assuming cold isn't an opportune temperature.thanksSS]]></description>

  <description><![CDATA[Hello Whitemist, Is your comment in reagdrs to the Fez?  Can you share a bit of info?When I was recently at The Fez I met the manager, chef and some of the staff and found them pleasurable, and interesting.  Specifically, in reagdrs to the manager, I found him extremely professional and knowledgeable with years of experience.   In fact, I was surprised to discover that he was the restaurant consultant that redesigned the food and beverage menus at a French Bistro in Providence that I frequently visited.  His efforts made a big impact; the Bistro was my first choice when I was in Providence.  My experience at The Fez was positive, the Manager was delightful and I'll go back when I'm in the area as well as, strongly recommend The Fez too!]]></description>

  <description><![CDATA[I just heard the piece on KPLU this morning. Adam did great! We are prtety sure our oysters have been poached over the years. When I was in college years ago, I was at our place in the dead of winter for an overnight. I was awoke at 2 am by a blinding light in the window. I opened the shade and it was a searchlight from an oyster barge. They saw me in the window, extinquished the light, and chugged off up the canal. That was days when we had no electricity or phone.]]></description>
