Easter wine pairings for celebrity chef recipesUnderstandably our national newspaper columnists and contributors are in Easter mode this weekend. Here are some suggested wine matches for their recipes: Bill Granger's baked salmon with minted peas This is exactly the sort of dish Chardonnay is made for so put aside your prejudices if you've become a card-carrying member of the anti-Chardonnay brigade and give it a whirl. A creamy, cool-climate style, I suggest. Hugh Fearnley Whittingstall's Easter glazed ham Ham is underrated as the centrepiece for a meal as I discovered a few weeks ago when the one I cooked one up for a St Patrick's Day feast went down incredibly well. We drank a 2005 Marcel Lapierre Morgon with it which proved to be the perfect match. A similar quality cru Beaujolais would work equally well or try a Central Otago Pinot Noir from New Zealand Mark Hix's Stuffed breast of lamb with green sauce A frugal and delicious main course from chef Mark Hix. Without the ‘green sauce’ (aka salsa verde) I’d have gone for a red Bordeaux or Rioja. With it (and I'm not sure you necessarily need it with the herby stuffing) I’d probably opt for a Chianti Classico. Gordon Ramsay's Chocolate and Cardamom Tart Gordon (or some minion) suggests black coffee with this tart and I can see why - it is intensely dark and chocolatey but if you're serving it for an Easter meal you might want something a bit more festive. A 20 year old tawny port or sweet Malmsey madeira would both cope or try a Maury or Rivesaltes from south-west France Mark Hix's Rhubarb crumble and custard ice-cream Although ice cream can be tricky to match with wine on its own the addition of crumble mixture and the sharpness of the rhubab should make it an easy pairing for a dessert wine. I'd suggest a late harvest riesling or an ice wine. Bill Granger's Strawberry Vacherin The first of the new season's strawberries are coming into the shops so use them to make this easy meringue-based pudding. You could drink a similar sweet wine to the rhubarb crumble above but if you want to have a bit of fun with your pairing try Marks and Spencer's new Moscatel Rosado, a sweet pink wine from Valencia - great value at just £5.49 a full bottle. |
