One of the most useful parts of your membership entitlements is a free ebook - a comprehensive guide to most of the ingredients and recipes you're likely to want to match. First published by MItchell Beazley in 2000 as Eating and Drinking: an A-Z of great food and drink combinations it was the first book to offer comprehensive pairings for the dishes we encounter every day - and to include beer and other drinks such as tea as well as wine.

Many food professionals - including wine writers, sommeliers and PRs - have told me that they refer to it constantly.

What I’ve deliberately left out are dishes that aren’t fashionable any more (the kind of restaurant dishes you used to find in the 60s and 70s) or that you very rarely come across (like woodcock and snipe) or that I wouldn’t eat if you paid me (snake, tapioca pudding). I’ve also left out foods you’re extremely unlikely to pair with any kind of alcoholic drink: pot noodles, porridge, baked beans – that sort of thing.
