Could you help match a three course dinner?

Q We are having a three course dinner this coming Saturday night
The first course is cold boiled shrimp with a cajun remoulade sauce. The
entree is pan-seared deep-sea scallops with an orange zest and vermouth
sauce and the dessert is a very sweet peach pie. Would you be willing to
recommend a wine to go with each course?
A You could probably drink the same wine with your first and second
course if you wanted. A good chardonnay would go with both - not too
oaky or with too much bottle age though. Alternatively you could
start with a sauvignon blanc and move onto a chardonnay. If you like
to have a red at some point a fruity pinot noir would go with the
scallops too. (Try one from Chile if you haven't yet done so).
With the dessert it's probably going to be difficult to find a wine that won't
be overwhelmed by the peach pie if as you say it's very sweet. I'm not
sure I wouldn't try an orange flavoured liqueur such as Cointreau served ice-cold in shot glasses or a peach-flavoured wine
